We use Outlook.com as our email address.

I check emails on a tablet and notice that sometimes a message will show up in the junk folder as being several days old but was not there when I last checked.

This morning there was one from yesterday and another from last week. Neither of these were there when I checked late last night.

Is this just a quirk of Outlook.com?

Read the headers line by line which are time stamped.

My experience is that junk mail is sometimes initially delivered to the Inbox but in later minutes/hours/(days?) is automatically moved to the Junk Email folder. Had that happen to legitimate non-junk messages a couple of times, I guess it teaches you to review the entire contents of the junk mail folder often.
