Im currently think of moving to Server 2008 but would like to keep the backup and media streaming capabilities of WHS.
Has anyone tried WHS in 2008 Hyper v?

Not a very common approach to utilise enterprise technology with domestic technology. I would not expect too many replies.

But have you given it a shot ?

I would recommend just copying the backups, etc over to the 2008 server, but keep in mind that 2008 server is intended for the enterprise not the average consumer, so it may lack some of the media capabilities.

use disk2Vhd from www.sysinternals.com, this will take a physical server and put it in Hyper-V for you. Not sure if WHS likes Hyper-V or not, but Microsoft is going Hyper-V crazy so I would be surprised if it didn't.
