Ok so I have a MSI Neo8 mobo with a 2.2GHz AMD 64bit cpu.
Hard drivers: (each drive is a 1TB) 2 sets of 2 in raid 1.

What I want to do is:

Web server and email (we have 5 site all that are play sites)
i also want to store back ups and media for our windows media center.

We have at this point:

1 MacBook Pro
1 Acer Laptop (XP Pro for OS)
1 WMC PC (our main TV) (Windows 7)

ADSL modem to GIG Lan to wireless N.

So I started thinking windows home server but con't find any thing to say it can do email and web, then I started to think about ubuntu and fedora but whats the best out there now?

Whats best is a matter of opinion, for Linux - Fedora, Centos would be a good place to start. I run Ubuntu Server with Lamp, a one stop shop for php, mysql and apache. There are plenty of guides out there for installing a mail server, it can be tricky so some patience on the command line is essential for your dovecot (mail server) install. For your backups you can install a Proftpd ftp server. Lastly I would install Webmin to control it all, cron jobs etc. And best of all, its all free ;)

Support a locally made Linux based Operating System, try Linux Lite.
