I reccomend debian or Ubuntu
some people use Redhat derivatives like CentOS, clarkconnect but I find debain-based ones have the ease-of-use edge thanks to apt-get install

I second Debian.

Ubuntu is good too, but Debian is very strict in keeping everything *exactly the same* even when you run an update. That's why people moan about Debian being out of date sometimes.
