Definitely experience (d) on the iPhone with iOS26. Still use iMac and MacBook but don't really experience it on those devices. The poor typing on the iPhone was one of the reasons I am using Android (Nothing Phone) as my primary phone
Here is a crazy notion, lets give peace a chance.
Look in System Settings under Keyboard. Click Edit next to Input Sources and see whether things like "Correct spelling automatically" are turned on.
It wasn't always this bad - used to be excellent, actually - but is now quite bad in iOS 26.

i have turned everything off, and it still happens
Can you be more specific about what apps this happens with

It’s terrible. Like they asked AI to perform obviously nonsensical autocorrects.

Secretly? Afterwards or while you're typing?
Yeh I noticed the auto correct has been a tad over excited.
use iPhone, iPad, and across multiple apps including MS office etc.
its like it’s trying to suggest better words to use instead of the closest match to what you spelt wrong…..
Are you talking about the autocorrect or the atrocity that is keyboard accuracy? They made a change something like 10 years ago and it’s never gotten better. There was supposedly a update this year for the latest ios but since I don’t have it no idea if it finally fixes it.
Android keyboards, standard or custom, are pixel accurate and is probably one reason i’d switch back.
iOS autocorrect is frustrating at times as it is extremely slow - it suddenly changes words when I've already written three or four subsequent words, so I either don't notice or I have to go back quite a way to fix it... then it does the same change again!
