geocom: It's up to you it will take it in either option. Most of the time it will be cheaper to by 2 at 4GB rather than 1 at 8GB, but if you want to have the option to upgrade the RAM again then the 1x 8GB is most cost effective.
Only thing is to make sure that the speed is the same.
If your using mountain lion(OS X 10.8) if you click on the Apple logo in the menu bar -> About Your Mac -> More information -> Memory it should tell you what sort of RAM you need.
To be safe it will cost more but there is Apple memory in most cases PC RAM will work just fine but you may as well play it safe as there are some differences between them. I have found that it cost less to get it from Amazon(however they wont directly ship it here) in the past but I was getting 2x 8GB modules so just take a look around.

I dint think that macbook pros could take 16gb ram?
