Can you usually expect to pay around $500 to upgrade RAM? 1 Day is selling a refurbished iMac for$1249.99 which has 8GB Ram but they are selling the same model for $799 which has 4GB Ram at yesshop. I can't seem to find any difference other than the difference in memory.

You could buy and install the ram yourself for under $100

Odd. Buying a new iMac from Apple NZ, going from 8GB to 16Gb is $320

I did not look at the links. The reality is you are dealing with two different companies there and machines that were likely obtained from different sources. Be sure to check the warranty conditions also. The list goes on and on.

How much would 8GB affect the performance of the computer compared to a 4GB anyway?

Unless your into heavy gaming and or Video/photo/database manipulation going from 4 to 8 GB of ram isn't going to make much of a difference other than less HDD thrashing as it wont need to use the pagefile so often

going from 1 or 2 GB to 4 GB is more of a boost than 4 > 8, 8 > 16 etc etc for normal everyday use

Depends what kind of applications and typical use of those and how many you typically run at the same time. For instance some people like to open 40+ browser tabs which is a general use case where more memory is worthwhile performance gain.
