That baked goods contain far too much yeast (and usually only ready-made baking mixtures) to safe time. A 1.5kg loaf of sourdough bread, if made by hand with the necessary time, only needs a rice-grain-sized amount of baker's yeast to start the process. Therefore, we bake proper bread ourselves every 14 days (and freeze half the quantity for the second week without any problems). We use only 6 ingredients as a base: Flour, live sourdough culture, a very tiny amount of yeast, water, salt and -most important- time.

 

 

 

What do you need the added yeast for?

Geektastic: Personally I don’t much like Sourdough. Do I need the same amount for normal bread?

 

What don't you like about sourdough? There's a pretty wide range of results possible.

 

Anyway, no, you probably need a bit more for normal bread but you can leave it to ferment longer. Look for a "no knead" recipe. They usually ferment overnight, reducing the need to knead and the amount of yeast used.

The fact that after zero communications from anyone all day, the minute I get into a glue-up I get two phone calls, multiple texts, and someone coming to the door.

 

 

This is why all guys over the age of about 50 automatically respond to a phone ringing with "F--k off!!!!". They may then answer it politely, but the instinctive response is the former comment.

I never have my phone make noise. If I am holding it and you call and you're a number I recognize then I may answer, otherwise no, you can wait. Same with people at the door. Better be in a van and I see you with a parcel on the camera or ignore.

E-bike riders that ride at a million miles an hour on a shared walkway/cycleway even though there's signs telling you to ride at a slow or moderate pace. If they can ride that fast then they should ride a normal bike. Lazy pricks.

Metlink (again, sorry if I sound like a stuck record).

 

I was about to write an essay as to why but instead just a warning to any fellow bus commuters to check your timetables, as many of them are running to a Saturday one until 29 Jan. 

 

As usual their comms around this are woeful.  You'd think they'd have this sort of news emblazoned across their website but it 's not even an 'alert' as such.  I found out by seeing an article in the DomPost and confirming with their contact centre.

 

Given this is effectively the same authority that wants everyone to get out of their cars, my message to them is "dream on".





Auto-correct is why I have crust issues.

I live in Island Bay and the bus service is so hopeless now that it's almost faster to walk than catch the bus to get to work.

 

Between the council removing car parks and Metlink cancelling a large proportion of bus services it's becoming extremely difficult to get around the city. Cyclists seem to get whatever they perceive themselves to be entitled to, while the vast majority of us are left with very limited services.
