Would +1 the Sketchers, was skeptical when I paid a fair bit for them in Albany mall but they have been great a year later.
My only other pair that I wear apart from those are some nice Dr Martins oxfords - can be both smart or casual and make me an inch taller.
I live in Levis too, I recently bought these:
They are the most comfortable shoes I've ever owned, they have a special insert in them that makes them super comfortable. Plus they look really sharp with Jeans. Much much tidier than running shoes + Jeans!

Like you, I'm very flat footed and these are the most comfortable dress and smart casual shoes I have ever owned. They are pricey, though mine have lasted years (I have a few pairs and rotate them).
For something a little different, and more casual/european (sans socks), have a look at Allbirds. It's an outfit run by Wellington's own Tim Brown (ex All White and Wellington Phoenix).

I really really like the look of them, more than anything else I have seen. Are they comfortable? Have you worn them for 8+ hours walking around in malls or whatever?
I did have a more general fashion question about wearing dark brown shoes, blue jeans (light or dark) and what colour shirts? Does shirt colour/Shoes cause issues?
I've typically really only owned black shoes and only typically wear very dark coloured shirts (I am ultra conservative) but as I get older I wonder if I should "branch out"
If you want something good, RM Williams boots are excellent. A bit more than your budget though but one of their styles would suit.
Since they were bought out by some French company their range has been significantly decreased, as have their custom options. They will still do custom work - I had them make a pair of boots that normally only come in cowhide out of Kangaroo leather and they charged me nowt for doing so over and above the normal boot cost.
RM's will last decades with care and resoling, look good with everything from jeans to chinos and beyond (even a suit if you get the right ones!) and are not made in China...!

I bought the orange and green cases and swapped them around so that I have a case that is green and orange. That's awesome when I wear one green shoe/sock and one orange.

Then I got some shorts from aliX. I cannot show a link as they are no longer available but they come in green, orange and yellow. I got the local clothing alterations lady to take them apart and reassemble them as orange/green/ orange/yellow and green yellow.
I'm looking for a suitable set of T-shirts for the final cut and stitch job.
I wear this stuff to work which is brilliant as my manager says that I no longer have to visit customer sites! (Last time it was to Utah which sucks as you cannot buy booze.)
When I want a more restrained look, I go for Puma Trinonic R698. Suede leather in purple, red and blue. Very tasteful. I want to learn how to do eye make-up so that I can have purple one side and blue the other to match the shoes and socks!

Most comfortable shoes I have ever owned. I have had 3 pairs, the first pair pasted me 3 years before they were too shabby to wear to work and I ordered another 2 pairs, one in black and one in brown.
Can land for around $100 each by looking online.
Merrell is my go-to brand. I have causal and hiking shoes from them. My current favorite are the Moab Rover, which go well with most things. I have the brown/green color (kangaroo) and I'm just getting the black. $240 or so, though Shoe Clinic has $20 off or had recently. With the NZ dollar weak it's not much cheaper to get them from overseas, it used to be though.
Those shoes form Overland / Merchant are pretty good quality. I've got 2 pair of boots by Giancarlo Moretti from them, and they have both worn in beautifully, and are super comfortable now.
It's difficult to give advice because everyone's taste, circumstances (and feet) will vary. But some comments based on edited bits of the OP:

I don't think age has anything to do with it. I bet I'm older than you (just because that's how it often turns out) and I still wear sneakers because I still wear jeans, and I like the look of sneakers with jeans. But by "sneakers" I don't mean "trainers" (Nike, Asics, etc. athletic shoes, which I only wear when I'm doing something active like going to the gym, walking in the bush, etc). I mean things like Converse (I'm a Jack Purcell fan myself, rather than Chuck Taylors, but the range is limited here so I sometimes buy overseas) or Deuce (which are good for me as they tend to be a wider fitting).
networkn: largely because I no longer wear as many T-Shirts, and tend to wear Polo's and proper button up shirts.
I wear sneakers with button-up shirts all the time and I think it looks fine (again, see the earlier distinction between "sneakers" and "trainers").
networkn: I like boots for the ankle support and did wonder about a pair of brown casual boots, but I was hoping for some advice perhaps.
I also like boots. I have a pair of these which are really comfortable, and a similar pair in black (can't remember off the top of my head what they are). They go well with jeans and chinos.
networkn: I know that shiny shoes don't tend to dress "down" too much, and matt shoes tend to not as easily dress "up".
If you're wearing 501s most of the time I wouldn't worry too much about dressing them up, but if you also wear dress pants, by all means buy some polished dress shoes too.
There are a lot of cool options in here - I will be coming back to this thread next time I am after ideas.
I usually wear dress trousers to work and with those typically just get hush puppies. I have a go-to model I get now (Cahill) - they last about 6 months including a fair bit of walking and I'm ok with that.

I tend to wear shirts with jeans, but if I do wear a t-shirt or polo, I'll reach for sneakers rather than a dress shoe.
Hush Puppies don't last very long. I switched to Ecco, which aren't quite as padded, but they're top quality and last a lot longer. Ecco Helskinki bicycle toe is what I wear - the toe bit is the stitching I think, you can get with or without.

Generally, brown shoes are much better at matching with most things. Black shoes are harder to get right and easier to look worse with things.
