Commenting on a Facebook post does not provide the poster with any more information than that already publicly available on your profile by anyone. The only way your email address is visible to anyone is if it's (stupidly) set to public on your profile. These quizzes really are nothing more than a bit of fun (not for me personally), and a way for Facebook pages to increase engagement (and therefore hopefully gain more likes leading to more ad revenue).

I do recall something about the like and share type posts would be set up to harvest likes and then the facebook page with 1million likes is sold to some other outfit who then changes the page to their business page which must be successful as it has 1 million likes.
Don't know how they can turn a comment type post into something else though.

I saw one the other day; "doctors furious about [method of getting rid of wrinkles]". My thought was "if doctors are furious about this then it's probably unsafe!"
