Thanks for that and everybody, this has been so useful, I dont want to avoid fillers but have to and to be honest non filler sausages are better imo.
I will keep going to the Albany German butcher whose sausages are definitely 100% meat, but being German they eat a lout of Schwein :-), although the variety at that butcher is insane, I love all the cold cuts and pate like wurst for spreading on things (sometimes i just take a teaspoon of it oops).
But would be nice to get some quality invasive wild species in the diet again (deer of all breeds, goats, wild pig etc) and some beef. Will try Pinehill on the same day as they kinda close together. Then another trip try the ECB butchers recommended here.
I plan to buy in bulk and freeze them but have them loosely individual so I can just pull out a banger, quick defrost and in the pan, no fuss auto immune diet, some veges and fruit for carbs and Im good. ๐

IME goat sausages were very gamey. Great for curried sausages but otherwise a bit too much.

Where abouts are you Mike? Do you hunt? That is the best way to control the flavor, get directly to the source. If it wasnt for my serious illness I would still be roaming the country myself :-). So much good tucker out there.
I'm in Blenheim. I mostly hunt my own game and catch my own seafood. A friend of mine has a big block in the Sounds. It has goats in abundance, the odd pig and deer and occasional feral cattle (no farms for miles around and no tags) cattle.
I don't mind gamey ... I eat mutton-bird.
The goats I shot for sausages were all young animals, so I was surprised they were so strong tasting. Maybe they had been eating something that gave them that flavour. No drama - they made a good curry. Next time I'll have the butcher throw some curry paste in the sausage mix.

You can smoke and grill at the same time, which produces intensely awesome Burgers, dials the flame grilled feeling to 11/10 haha ;-p
I'm currently experimenting with a smoke injector system for my BBQ. It has side burner, so the idea is to get a big teapot, load with wood chips and sit it on the side burner to produce smoke. I'll use a little battery powered fan to push the smoke out into the BBQ

Yes she is VERY good. Basically she found it to be a Mitochondria issue regulating the DNA.
So her diet is 4 cups of cruciferous veges, 4 cups of leafy greens, 4 cups of coloured vegies and small portions of meat and fish.
It is kind of like Paleo but focussing on the greens heavily.
First ever visit to PHB this evening off the back of this thread -which is silly 'cos it's not that far away.

Vegetarian is healthier lol ๐
