Just got the wife a Nokia 3120C and the mono handsfree set that came with the phone is pretty average.
I see some of the better handsfree (mic/earphones) comes with the 3.5mm jack.
It look like I can buy an adapter (Nokia AD-52) and use a newer handsfree set (WH-205).   

Have anyone tested this or have any recommendations?

I picked up om trademe a Nokia headset with stereo earpeices and a 2.5mm plug that worked fine. I wont say the sound was the best quality but it was certainly significantly better then that provided by the standard Mono earpeice
