Any one tried making cheese at home? Any geek tips?

Just started with some cream cheese, but thinking of "graduating" to mozzarella as these are my favourite ones.

Simplest one I've attempted is dumping a fuller-fat yogurt into a muslin cloth, and letting the gunk drain out overnight, resulting in a quite soft cream-style cheese. Great for stuffing cannelloni tubes :-)

I've been tempted to try those cheese-making kits for the Camembert style cheeses. Should have asked for one of those kits for Xmas ....

my wife has made panneer (Indian style cheese). Fantastic with spicy onion, tomato, chili relish.

I did a one day course run by "The Over the Moon Cheese Company" a couple of years back. Was great. They also sell starters - cultures - for a wide range of cheeses. Cream cheese and mascarpone and yoghurt especially are easy and excellent. Ricotta also nice and easy. Halloumi a bit more tricky and I have tried several Mozzy recipes before we now get it pretty good. Hard cheeses need much more work!
