You would turn the wifi off on your toy router and create a cloud managed or inbuilt controller managed wifi network connected over cat6 - Ruckus provide both methods I think.

What kind of speeds are you currently achieving over wifi on the 2d orbi?
As you might have noticed, that's a much more powerful device than the standard Orbis.
As to the comment that you need to spend $10k to get the most out of Hyperfibre, I think that is a bit of scaremongering and could be replaced with more helpful advice.
I won't profess to be a network engineer, but I'll help with what I can.
There's no point getting a 10G switch to feed your TVs and PS5, they have 100M or 1G ports, so that's your bottle neck there. Feeding them from the 1 gig ports on the Orbit will do just fine. That doesn't mean that multi-gig is pointless though. Your PS5 will be able to download at its full speed any updates and basically won't interfere with anything else on your network. On gig, this is not necessarily true. Remember that while each port can only do 1 gig, they can all do 1 gig (well up to a maximum of 2 gig total with Hyperfibre 2000)
There's definitely some good mesh units out there if range is the problem. As you already have the AX6000, if you're happy with the speeds you get from that when you're close you can add a couple more satellites to extend your range. even if they only have 1 gig backhaul, we can go back to the idea of one end of your house having a gig and the other end having another gig. great if you've got multiple users
PB tech also have a helpful page where they've highlighted some of the equipment that's out there that will help you get the most of your connection if you're not happy with the supplied Orbi, Hyperfibre - The next generation of fibre - PBTech.co.nz. We've got an order for the TP-Link BE85 to our lab at the moment, which while obviously is at the highest end, it comes with multiple 10G and 2.5G ports. While this is pretty expensive, it's well shy of the above mentioned $10k. (Note I don't think you need to go this extreme)

So currently, WIFI from the Orbi is around 700-800mps if i stand right next to it, well short of the Hyperfibre 2GB
The Deco X20 unit which is ethernet/hardwired in the lounge gets around 400mps-500mps...
The deco X20 unit in the main bedroom (other end of house) which could be connected direct via ethernet as theres a spare port there but it seems to only pick up the wifi from the Original unit gets between 150mbps-200mbps
I would love if i could get speeds at both ends of the house closer to that 1GB

Based on this, that's looking like the best you're going to get from this orbi. Looks like you're really after something that offers wifi 6E

Google - "wifi 6e real world speed" and have a read of the many sites which have undertaken tests on this.
You will never get 2gb. Max theoretical speed for Wifi 6E is ~ 1.6gb but its dependant on so many things and you will have to be standing right next to the router.
In reality - you are not going to get the speeds you are after as part everyday use.
Yes Hyperfibre is way overkill and while you mentioned future proof - there isnt a need to future proof. Your fibre is already capable of it. Its just the ONT's and Chorus is releasing all new ONT's soon which are much smaller and in-line with the existing ones so its mostly a waste of money and your ONT will need replacing at some point in the future.
That said - if you dont mind the cost, you really need a wired setup to make the most of Hyperfibre speeds.
With that router having 1 x 2.5gbe port - you'll need a switch capable of 2.5ge+ and to wire to every device and those devices in-turn need to have relevant 2.5gbe/10gbe cards in them.
And after all of that - you need to hope that the site you are accessing/downloading/streaming is capable of giving you 2gb speeds.
So after all the hassle - you could just stay with the current setup and maxing it at 1gb (~ 940 with overheads).
