Late next month I am attending a course for which the manual is online as behind a password, with index on right side of the screen, text on left with a links at the bottom like next or previous within each major topic.

What/what software can I use to download the manual and convert it into a word type so I can read/study it off line.

It would appear they don't wish you to take it away via that means.
Perhaps they are concerned about people taking their intellectual property.
Have you asked them if there is a form you can get in advance?

They used to have a downloadable version but they decided that a web version was easier to keep up to date, which is understandable, has the odd video clip imbedded.

I'm not aiming to steal/spread their IP (they've got my $2.5k already), it just that I don't work at a desk with a pc in front of me so trying to read/learn the course contents online is a little limiting.

Ultimately I can take my own laptop and mobile hotspot my phone but I like paper to scribble on.

So when your course is finished, you lose access to the content ? What happens if you need to refer back, sometime down the track ?

Not having a downloadable format is really FUBAR. YOU have paid for the content, you should be entitled to it in a format that you can keep.
