So I'm a MSFS 2020 user/flyer, I'm using a AMD 5800X3D CPU, 32GB DDR4 RAM on a RTX 2060 Super GPU - I'm reasonably happy with my output. Using two 1080 20" monitors

I'm looking to upgrade my GPU - something like an RX 9070 XT

Any experts out there able to give advice on what sort of graphics improvement should I expect

FYI the 9070 XT has higher power requirements than the 2060 Super, so take that into consideration in case you also need to upgrade your power supply at the same time.

Enough of an improvement that you would be looking at a monitor upgrade to see good use of the new GPU.

Now if you want to see a proper visual improvement in MSFS make sure you are not using TAA. Use DLSS with your current nvidia card or FSR4 if possible with your new AMD card. TAA is really bad in MSFS and makes everything blurry especially at low resolutions like 1080p.

These upscaling techniques work better with a higher base resolution -> target resolution. At 1080p this is not great, nvidia has the option for DLDSR to supersample, AMD doesn’t have an equivalent that uses AI upscaling yet; just regular upscaling via VSR.
