I have always either used Western Digital or Seagate, IMO they're best

This is an easy choice. Go for the first one.. 500gb Western Digital Caviar Black 32MB CACHE. The 32mb cache will serve you well, and has added performance gains over the 2nd choice with a 16mb cache.

I second this completely.  I've got 3 Samsung Spinpoint F1's in my HTPC and they have never caused me any issues.

500GB, go tot full 1TB+. I put in a 250GB drive for my multi-OS boot and felt like I was seriously stinging it.

1TB would be the bare minimum I'd go for now and yes go for that bigger cache, I remember when I went to 16MB cache, file transfers were much faster.
