I've recently changed a client over from using IMAP back to POP3 (long story), and all the emails downloaded file, but I've lost the folder structure, and which emails which in what folder.

I'm going to get our webhost to restore from a backup, what's the easiest way to make this transition?

Presuming the problem is offline access to email, have you looked at using IMAP in offline mode rather than pop?

That functionality is sometimes known as "Disconnected IMAP", and is offered by many mail clients.
