Aloha:
Vodafone NZ is not disabling the VoIP function in the N95s or let's say it in the other way: you can still use standalone VoIP applications.
I have a Voda N95 and I am using Fring, which is so far the best VoIP application for this phone. You can use Skype, GoogleTalk, MSN,SIP and Twitter services with Fring.

When I arrive home my phone connects to our WLAN, then people can call me on my phone thru Skype.

Vodafone UK removed the SIP client completely. You can still use Fring on a UK Vodafone handset but you couldn't use the built in client which is far superior to Friing. They also did horrible things to the E65 and disabled the ability to use the SIP client over the WLAN and only let you use a Mobile Data APN.
