On my wifes Lumia 800,  I have set it up  sync to our facebook account.   I have then gone through and unlinked a fair number of these contacts (from their facebook profile).   I did this a while ago, I  think this was to avoid these facebook contacts appearing in places where we didn't want them to.

All good, except that on the people tile which has the little mini tiles that swap around the images of the contacts,  these 'extra' facebook contacts  still have their picture appearing. 

Is there a way that I can stop this?  Or, perhaps I can somehow clear these contacts 'image' that has come via facebook.

Keen to do this - my wife would like the people tile images to be limited to family rather than everyone.

No, the People tile uses the most recent photo and info for all contacts. Everytime it syncs with FB it would renew them. Your only option is to remove your FB account

ok - that is consistent with what I am seeing.  I had hoped that since when you unlink a contact from their facebook profile, then that contacts image (from FB)  is no longer shown as their image... then it would also apply in the people tile.

When you click on the people tile, there is agroup called family, click on it and you can then only add teh contacts you want. You can then pin that to the start menu.
You can also filter the contacts you see under the settings option in  people, you may be able to filter out FB contacts

Yes and then you could unpin People from the Start Screen and pin the Family group you created
