Teenager has asked for FC25 for Christmas, he has an Xbox Series S.
Microsoft appear to have both the Standard and Ultimate versions half price this week.

If I buy the Ultimate version online, it asks for a Microsoft account, does it then send me a code that I can wrap up for Christmas? Or does it add the game to that account?

Standard version would be much easier to gift but for the extra $20 the Ultimate looks good.
