I assume there is no issue mixing different Unifi APs on the same network (e.g UAP-AC-Lite and UAP-AC-LR)?

Nope. Just be aware that depending on what models you are mixing that models going EOL next year (if you are using these) will limit you and you will no longer be able to upgrade the controller from that point.
Roaming seems sketchy between different ones. I have no end of problems if I have the 2.4APs doing the same SSID that I have on the AC-Pros with the IOT stuff. If they are all on the old 2.4GHz ones then its fine. Now they do 8 SSIDs per radio I can retire the other ones but that is effort to arrange so I am just leaving it as is for now till I have to with them going end of support.

Those AC models used a different chipset.
UBNT's way of dealing with EOL products is pretty crap though, but that's what goes with the pricepoint.
You just cant update the controller to one that doesnt support them. So you are stuck with running 2 controllers if you want to get new hardware that the old controller doesnt support. That also means each controller will report ones on the other controller as rogue APs if you use the same SSID across them and you will have no roaming at all between the 2 sets of APs.

Thanks for that - just spotted my UAP-LR (x2) on the list....arrgh. Thought I would get a few more years out of them. At least I have an excuse to upgrade to UAP-AC-LR (or similar) and get on to something a bit quicker...

I think the dual band APs will only do wireless uplinks on the 5GHz band so if you are needing to use that function you will need to be aware of that. But I have seen multiple sites with a mix of different models and generation of APs without issues.
I have three UAP-AC-LR's and two UAP-PROs and they work fine, I can roam around between them pretty seemlessly.
As mentioned, the PROs are going EOL but they're old secondhand things that live in the carport and shed, so I don't really care too much.

I thought all roaming was a client decision and if things are "latching on" that's their own stupid fault?
