OK so I have figured that I can get a ceiling mounted AP in the top of our stairwell. Here is a pic of the upstairs, do you think 1 good unifi AP would work for the entire top floor? The walls on either side of the stairwell are just wooden framed with gib.

If it's a good AP it'll be fine. 

 

I have no experience with Unifi gear so can't comment directly. 

 

But to add another option, I would suggest Grandstream APs, very happy with the GWN7660 we have, we get extremely good coverage. Don't need a controller, one AP will be the master of the rest.

We have two Unifi AC Lite APs that have both been mounted in our ceiling cavity for the last 5 years, and are still working great. At the time people advised against it, and I see people still do. However they are rated to an operating temp of 70deg, and our experience has been that they are fine. We did this for the same reasons - not wanting to have them visible.

Yes - One AP in that position mounted on the ceiling will work very well.
