I dont think anyone bothers with phone cable anymore. Just run cat 5 instead. You can fit RJ 11 plugs into it. Yes keep it away from electricity cabling.

dont do this, buy the proper rj45 to rj12 cable and use that.

2x UniFi AC Lites (Here) is what you're after. I host a UniFi controller (as these are managed by a dedicated controller) you can use to manage them. Have a look at getting a 16/24pt TP-Link switch (or UniFi switch if your funds allow for it) to link everything up and have it all going to a cabinet in the garage or a closet. Install patch panels (it'll make your life way easier down the track) and have a path for a RBI installer to install coax to the roof from the patch panel for RBI.

Looking closer, I have almost exactly the same house @KyleCoco. Looks like a GJ Atlantic without modifications, so maybe I can offer a bit more advice. 

I'm not sure how far through the build you are, but be really careful that the overhang by the back door doesn't jut out to prevent you driving into the garage. Squaring off the rooms worked well as others have mentioned.

Running rigid conduit is a good idea but you'll need pull cables, especially on the outside walls. The pitch of the roof means it's impossible to get over to the tops of the outside walls in the roof space except where you have gable ends. If you have conduit at least you'll have a small chance of pulling something through.

Two unifi access points covers the areas from the master bedroom to past the games room. We have one in the cupboard outside bedroom 4, and the other roughly above where the fridge is. Wifi coverage is a bit weak at the far end of the garage, which may not bother you. I later added a Smappee energy monitor to the meter box on that wall and had to add in an extra wifi access point to cover it. For now however, you could just make sure you have an extra 2 runs of Cat-6 to the end of the garage (if you use unifi AC PRO access points they take two cables each, the lites only 1). We also have a spare pair of cat-6 cables to the top of the master bedroom walk-in wardrobe in case we later want to improve the signal strength in the master bedroom (it's ok, but I didn't know that at the time)

I thought I was being clever and bought a Unifi PoE switch like mentioned above. What I didn't take into account was the noise. I understand you wanting to put it in your office, and you may be okay with the heat, but unless the newer models of Unifi switch have fixed their fan noise, you'll never be able to concentrate. To put that in perspective, I live under the flight path for the local airport. There's a group in the neighbourhood who complain about noise from the planes. I like planes, but I can only hear them when I'm outside because even after replacing the fans in the Unifi switch with low acoustic models it still sounds like a jet engine in my server cupboard.

Anyway, I bought the Unifi switch just after it'd been first released. They may have fixed that by now. Perhaps @michaelmurfy knows?

Yes the cooling curves have been improved in the latest UniFi firmware for them to the point it doesn't need to operate the fans 24/7. It depends what model switch you have however.

PhantomNVD: Is here any reason the switch cabinet couldn't be inside the gun cabinet space? All you need is some ventilation for airflow, and that's not likely to compromise the security surely?

Sorry to drag up my old thread but it has a lot of relevant information for the question I have now.

We are further into our house build now and getting close to time for me to run the network. I have 2 x 305m boxes of CAT6 Cable.

So far on my shopping list is once we move in will be:
