I read about switches says 1000 speed but if it's sharing power on the same cable wouldn't it be 100 speed or are there something else about it?

POE can certainly work over gigabit ethernet, you simply have data & power sharing a pair.

Depends if it's passive PoE or active PoE.

Active PoE will allow full Gigabit. Passive PoE can only do FE as 2 pairs are used for power.

Yup - a little coil thingy that splits the power and data at each end
