My Fritz!OS version is 07.01.

On the Wireless > Radio Channel tab, when I select the Adjust radio channel settings option, the 5-Ghz frequency channel is disabled and I can't see where to assign a different SSID to the 5Ghz channel.

Anyone here have the same router and can verify if 5-Ghz works please?

You can assign different channels cos I have. When I get home I'll look it up on my box. Try using advanced options. Think its near the bottle of the page? Maybe.

I'm still on 6.83
Setting to turn on / off 5GHz is found under Wireless -> Radio Network. About 1/2 way down the page.

Channel selection setting is Wireless -> Radio Channel.

Why would you want to assign a different SSID? As the router has band steering you'll always get the best performance by having the same SSID.

Yep, got all that... it's just that it's disabled as shown below.
