peejayw:

Thanks all. I gave up on what I was trying and instead plugged the 8266 into my HA Yellow and was able to flash from there. It now shows up in ESPHome and says its online but when I click "Visit" I get "watersensor.local refused to connect"

I think I'm getting close, any more suggestions?

Is your data appearing in HA or not?

Sounds like a plan, off to visit AliExpress, thanks.

I'm supposed to respect my elders, but it's getting harder and harder for me to find one now.

Actual product name is ESP32-C3 SuperMini WiFi Bluetooth-Compatible Board ESP32 C3

Enough pins for most things and small enough to stick in the base of random RGB lights. Have to hold one of the buttons down when plugging in to flash, and will not work till unplugged and plugged in again after flashing without it held down.

Search a few times and then you will find a whole lot of useful things in the bundle deals section.

What have you done for the YAML set up - apart from ESPHome?

I did not have any luck with the analog in on the ESP32-C3 when i tried it, but it was a lot less mature back then and these things change fast.

Looking at that code he had in the video it has a webserver configured so once the esp is on the network its got the basic web page showing.

If you have just flashed it with the empty default esphome yaml file that esphome makes when you reflash it without putting anything in it, then there will be no webserver as that is not in the default yaml, it just has enough in there to allow for OTA flashing and connecting to wifi.

Remember that chrome will initially refuse to connect to non https devices now and you have to get past its warnings before you will see anything from it. If you plug the serial into a PC and watch the serial output it will often tell you when things are crashing on the ESP. The 8266 needs an external serial chip so the port doesnt disappear on you when the thing crashes so you can keep the serial monitor open while you reset the board looking for what errors its giving you.
