Last night my venerable Ipod (5th Gen Video 60gb) died a fairly final death (transistors broke of the board). As I've been used the old dear as a USB drive only, I'm keen on getting the files off it before setting it off on its final journey.

However, while extracting the drive was easy enough, it sees as if finding a 40 pin ZIF to USB case/caddy here in NZ is nigh on impossible. I have ordered one through Amazon, but it will take a few weeks to arrive. I was hoping someone one here might be able to point me in the right direction to get something sorted sooner (even if it was a service to extract the data).

AFAIK that 40 pin connector is just a smaller version of the 2.5" laptop IDE standard. Saw a pic ages ago of someone who had an ipod drive plugged into a adapter to 2.5" then another adapter to normal ide. Then into their motherboard IDE controller.
