For this device https://www.itead.cc/raspberry-pi-sim900-gsm-gprs-add-on-v1-0.html can I use a SIM from any NZ mobile phone provider, or do I need a specific one(s)?

Here http://www.geekzone.co.nz/forums.asp?forumid=97&topicid=150270 a list of different formats (GSM/GPRS/WCDMA/HSDPA/4G/LTE/UMTS) given. What I don't understand is do all formats (or whatever the right word is) of a given provider supported by the same physical SIM? If yes, it looks any 2degrees or voda SIM will work, and spark won't. Is this right?

Spark / Skinny definitely wont work as Spark network is 3G/4G only. So yes Vodafone and 2degrees only with that device.
