I have this board...., ESP32-S3 Wifi BT Module Development Board 44Pin Type-C for Arduino IDE ESP32-S3-WROOM1 N16R8 N8R2 ESP32 S3 16MB Flash 8M PSRAM

 

but I am not sure which is the correct one to use in Arduino IDE?

I have always just picked the devboard option for anything ESP32 - the other options are just if you want to use the labeled pins thing mostly.
