Whether you need to enter a PIN for contactless transactions is up to the merchant. It will not be the same rules everywhere.

Paul - Am I remembering rightly that you are based in Christchurch? I think Foodstuffs have some operational separation between the North and South Islands, so I'm guessing that the POS may be configured differently on either side of the strait.

I used it for a 2500.00 purchase on gem visa loaded on apple pay with no pin.

Frequent Apple Pay user, also never needed a PIN. Highest spend on it so far is around $180 in a single transaction.
It is up to the POS to use CDCVM (Consumer Device Cardholder Verification Method) though - https://support.apple.com/en-au/HT202527.
With Apple Pay, Face ID, Touch ID, or the device passcode can be used as the consumer device verification method, instead of the more traditional methods of PIN, signature for transactions in stores, or 3D Secure for transactions within apps.
I was actually annoyed at Pack N Save the other day when despite all of the precautions and the urging to use contactless payments, I used Apple Pay and still had to enter my PIN...for God's sake...get it sorted - it's not that hard (ex-banker who used to work in the Merchant space, for reference).

That same company until fairly recently required you to select the type of card that you were using. Now no longer required but when it was I would intentionally select a wrong card type and the transaction would still go through. So ultimately a pointless exercise.

similarly annoying when you’re using a “Card Only” self serve kiosk and yet when time to pay, still have to select the sole card payment option.
