I believe there is no jailbreak for iOS 5.1 for my device, so I will take this time to decide whether i'd jailbreak or not when available -

When you jailbreak the ipad can you still use your apple account to buy apps, get back (redownload for free) all the apps you already bought?

will the function of the ipad be exactly the same apart from additional 'abilities'? or is there a difference to the way it works?

sorry couldn't find the answers online ...

(not worried about warranty)

Apps are linked to your account and can be redownloaded at anytime for free.
The fuctionality is exactly the same but with extra stuff on top. Only thing is make sure you go for a untethered jailbreak ortherwise if you go tethered everytime you have to reboot the device you have to have it plugged into your computer to get it to reboot.
But yea you get a second "app store" called cydia that has apps , tweaks and updates for your iDevice. Having a jailbroken device opens up so much more, on my phone i can do everything I want from the lock screen (mainly texting thanks to bitesms).

I tried JB for iPad 2 whilst on 5.0, then iOS 5.1 came out and reverted back to non-JB.

And when I was on JB, the only real benefit for myself was to use RetinaPad for displaying iPhone apps in retina display mode without 2x.

I had thought to use Swirly SMS but can't get it to work.

Much to my curiosity to use JB on iPad2, I don't really see helluva much reach to JB it at all...

Internet is my backyard...
