Pop into an AT&T store when you arrive and buy a prepaid gophone plan with sim.
I think for $50 you can get lots of calling and 2gb of data.

This adds a profile to your phone to allow at&T data to work.
AT&T class the iphone as a 'premium' product and prepaid as a budget offering. And, they don't want budget plans running on premium products. (this is what the guy in the store told me at least).
Do not join t-mobile -- they use incompatible frequencies (at least this was the case when I was there last).
