So I ended up with the iPhone 8 Plus - YAY!!

 

I backed up everything to iTunes, and restored all the information to the new iPhone - but all the apps are stuck on loading

 

Is it because I have soooo many apps?  I just installed the latest update (couldn't proceed without doing that), and none of the apps work.  Help!!  Please!!!

That's very possible. If they don't continue downloading, restart the phone (I had that issue with my iPhone X, apps wouldn't download). Other than that, pause all the other downloads.

You just have to wait ages for them to all download over wifi. In the old days, I recall you could restore apps from itunes on the computer, but I don't think they do that anymore. Haven't done it for ages myself.

Be patient. :)
If you had a lot of apps then it can take a while for them to all download.
