Is Applecare+ worth the $329 for 3 years of coverage on a Macbook Air M2 for a Uni student?
Also, would you buy the M2 over the M1 when money is tight?

Personally I go for AppleCare, cos it's AppleCare+ so also includes accident damage, others will argue not worth it, so it's personal preference.
No if money is tight I'd be going for the M1. M2 isn't a major step like it was from Intel to M1.
How much does it compare to your contents insurance excess?
The lack of hurdles you have to jump through is enough to warrant the extra cost on its own, and I'm not sure about the laptops, but with the phones they offer an "Express Replacement", so they send you out a new/refurbed unit before you have to send yours away. Means you're not without a machine for a long period of time.
Agree with @lxsw20. In a nutshell, unless you’re doing lots of video editing or things along those lines then the M1 will be more than enough. You won’t find yourself wishing you had a M2 over a M1.

No warranty stuff, no, CGA covers that. I have had a new mother board put into a 3 1/2 year old laptop under the CGA.
Check the "accidental damage" portion, you may find there is a charge for the labour contents, not the parts. So it will still cost, vs home insurance.
If you are clumsy like me Apple Care+ is worth it.
I recommend looking at the Apple NZ Refurbished store. You can get a Macbook Air M1 with 16 GB of Ram for $1700. I recently purchased a MBP 14 from the refurb site. It came with 3 charge cycles and not a single blemish.
The convenience is worth it for me. I could mess around with insurance but it's a pain. The process is seamless and quick with AppleCare.
