I recall seeing the internet tethering options in my iPhone 3.0 settings recently. I turned them off to save power by not using Bluetooth.

Now they're gone! And I want to tether but don't know how to re-appear them :P

Try updating to 3.0.1 and see if that helps.

Have you also tried resetting the phone and network settings, and/or restoring from a backup?

When I checked Apple's site it said that if this option is not visible you need to contact your carrier (Vodafone) to find out if internet tethering is available or not! That was helpful...

Sounds like it's a problem with the carrier settings though.
