I have set up my son's new ipod touch, but when i test sending a message from it to my iphone it comes up with his email address as the sender, how do I set it up so only his name appears as the sender not his whole email address?

Define a contact with his email address? Just guessing.

Hi - as the previous poster suggested, if you have the sender listed in your contacts with the email address then it should just show the name (this happens with my iPhone when I receive a message from my son's iPod Touch) - of course the limitation is that he will only be able to send iMessages to other devices running iOS5, AFAIK.
