After a cheap NVMe SSD in the M.2 form factor. Anything bigger than 16GB would be suitable. Cheaper the better.

It's for a boot drive in a 1U server. Already got a few 16GB SATA M.2 drives but getting a PCIe adapter for these to fit in a 1U case i next to impossible.

could you look at a PCIe ribbon to move the adapter to another spot?

What sort of price are you thinking? You can buy a basic 250GB m.2 NVMe SSD starting from around $80 these days.

Found 16GB Intel Optane drives on eBay for $20 and there are some second hand 120GB Intel drives on TradeMe around $40-$50, so probably around that price. Thought someone might have something lying around after upgrading a laptop etc.
