Hi there, I'm after a higher capacity SSD (512GB, 1TB+) that uses SATA (as opposed to nvme) in the m.2 form factor

Looking for a rare beast there. By the time 512GB and 1TB were common sizes pretty much everything had moved to NVMe. You're probably better off just buying new. I see PB Tech has ADATA SU650 SATA M.2 512GB for $54 and 1TB for $111. They may not be the best quality or greatest performing but you'll largely be limited by the SATA interface anyway.
