I'm going to just go with Spark I think. Can't hold out much longer as my dodgy charging connector + 16 GB storage are driving me up the wall.

Been a month, and tomorrow is D Day for buying my iPhone. Any word on 2degrees eSIM or even trials? Not betting on there being any, but I'd really like to not have to transfer my 10 year old account to Spark just to maintain my dual sim functionality. :)

Hmmm, this is dragging now.
Regardless of what people may think of eSim and how it works, the reality is some providers have it and some dont, and that is starting to create a barrier.
I like the multi-identity possibility of this - thinking more than just 2 sims - and even if the market potential is relatively small, when others have it and you dont - you're hosed.

As someone who has no vision on the work required I'll defer to your judgement on that :)
However, the 2d website did say it was coming "later in 2019" as part of the Apple iPhone XR and XS sales blurb. Unless they forgot to delete that line from amongst the standard stuff Apple provides to sellers, that would indicate they've been working on it; given our proximity to 2020, the tongue in cheek comment of "Soon" should more more true than ever.

Having recently spoken with someone who was directly involved in the deployment with one NZ provider. It is quite complicated with a LOT of validation activity done by Apple before launch.
It wouldn't surprise me at all if it would take 12 months from inception to delivery for most mobile providers.
And I seem to remember that the eSIM provisioning process is different between Apple and Samsung and other device manufacturers where on-prem hardware is required for each.
Perhaps 2D just isn't big enough in Apple's eyes to be worth doing, or the Apple Tax isn't worth the investment from 2D.
But all of the above is purely speculatory involved with chatting with a fella over beers about it.

Yup, if only we had standards.... oh wait we do, Software Vendors just choose to implement their own better ones....

I gave up and switched to a Spark eSIM when I got my new phone a couple of weeks back (also purchased from Spark). Now I can have one phone for personal and work! Between this and the CGNAT debacle I'm starting to cool to 2D.
