If he uses 800MB wont he still have 200MB and therefore 800MB would be moved off "my" plan to take him back up to 1GB?  So I'd have 700MB?

Can I just clarify, that the 'sharee' only uses the shared data after their own data including all of the rolled over data runs out? Example, my daughter is on a $19 prepay pack (1.25GB/mo) and has built up about 6GB (unheard of for a teenager!). If I share up to 500MB/month with her, does this mean that she will not touch it unless the whole 6GB gets used up first?

Correct - shared data comes out of your "pool" of data only once they've used up theirs. It doesn't roll over on their end, basically just tops up the difference.

 

eg - if you share 5gb and they use 3gb then the next month 3gb gets taken out of your pool putting their data share back up to 5gb - used only once their own data runs out.
