As much as I love my Fritzbox 7390, I find that the wireless coverage isn't as good as I'd like.

I see that AVM do have a wireless extender, but seems that they only offer it with an EU plug.

Any thoughts on a good way to extend the coverage of the 7390?

Get a cheap TP link access point and run a cable to it.

If you want something a bit flasher go for Unifi. Either way run a cable to where you want the new AP. Will be a millions times better than a WDS configuration.

Don't use wireless repeaters/boosters/WDS/etc.

As mentioned, put in a second access point and connect it via a cable. You can do this using almost any router and disabling its DHCP/routing services. You can get cheapy low end ones for $50 or fancy ones for $300, and anything in between.

Keep in mind the fritz is a dual band device, so if you need/benefit from the 5ghz (congested area), get a dual band access point to match.
