How does the Orcon Netcomm NF18 Fibre modem work in terms of jackpoints in the house?

Can you connect the "phone" port of the NF18 to a jackpoint and then plug your phone into another jackpoint and somehow it will just work?

Do you still need to use an old ADSL filter on the jackpoint to stop any noise or interference?

As long as the internal wiring is disconnected from the old incoming copper, then yes that will work. No filter needed.

Yes, with intergrated wiring NF18 plugs into 1 jackpoint and picks up the signals from all the others.

Dump the filters.

Make sure this is done.

Otherwise you will have a selection of faults that more than likely slingshot aren't used to dealing with since they dont do IW.
