I just bought some new Ku band LNBs. There is no skew reference mark of any kind on them. Can I safely assume they are the same as all other LNBs and if I install them with the coax connector pointing directly down, that is zero skew?

That's the universally accepted way - the idea is less water ingress with the connector aiming down.
