Hi There!

Anyone ever seen a situation where an abrupt loss of power on a server (Not graceful) will result in the loss of both the mdf and ldf files from an sql server and the sql instance service switching to "disabled"?

Was a virtual machine (VMWare Server)

I've seen power loss causing corruption on MySQL if that helps?

Sure, I have seen corruption too, but not complete loss of both files entirely and services being set to disabled.

did the files completely disappear? have never seen that happen before. would indicate FAT or MFT corruption. were the files hosted on FAT or NTFS? Did a chkdsk get run?

Yes.
You need a UPS AND a BBU on your RAID card.
(Or if you are doing software RAID, a decent UPS + a proper shutdown plan that works automatically)

Were the files hosted on a different drive (different vmdk) and that drive is now not accessible?

but yeah, shut down the server and chkdsk the host.

OP said it was a virtual machine.....

OP, I have only seen a similar issue when i performed a restore of a computer using ShadowProtect. Simply restored the files from another backup and it went fine.

Interesting that the files would disappear though.... would have thought it would have just been marked as damaged...

Well it wasn't just the the files went, it was the fact the instance contained no databases either, and the service was disabled. Weirdest thing I've seen in a long time. Can't think of a single explanation.

Were there any updates installed pending a reboot? Server had graceful restart recently?

Any errors/clues in event log?
