timmmay: It makes sense for some programs to run in the background. It doesn't make sense for two email clients to run, giving me two notifications of emails. Once I choose an email client and stick with it that won't be a problem any more, but while i'm learning and experimenting it's handy. Plus background programs are using CPU cycles and battery life - maybe not much, but some.
Plus the list of running programs gets annoyingly big. Other than programs that are designed to stay resident, like VoIP and email, i'd rather everything just finished.

The way the android operating system preforms, it is better to have the memory full than to force it to empty. All you are doing is killing your battery life and slowing the phone down.
I could link you to hundreds of case studies backing this, but an easy thing is to think of this...
There is a reason some of the best software engineers in the world developed android to leave applications in memory. Forcing applications to exit memory when close is half a line of code, which was specifically left out.

That is how android is designed to work, get used to it or go play with an iPad.

- My home screen has icons for some apps on it, but how do I change it to other ones? Specifically i'd like to get the Market on there.
- The temperature on my home screen is kinda cool, but it's wrong, totally different from the met service. It's probably driven from some overseas website. How do I remove it, or make it accurate? What else can I put on there instead?
- Once I go into the apps area, how do I sort my apps into folders?

As far as I can tell, you can't. You can only choose whether to have them as a list or a grid.
However, you can have folders on your home screen containing the different categories of apps you want.
Or you could put the different categories of apps on different home screens.
