As per usual, it is the fragmented Android way, I was surprised that Google didn't roll out a bandaid fix in their messenger app, as surely this would have provided a immediate solution for the masses
I don't think that is an option for Google. For starters, there are at least 3 different apps handling MMS, with the user sometimes having some input as to which is the default handler.
Still no updates from Vodafone for my wife's Galaxy Mini III or my 3-year-old Galaxy S. We never had any updates and I don't think we ever will.

I think you'll be absolutely correct.
As per one of your previous posts, Vodafone have pointed out that this is a theoretical risk, so they appear to believe a wait and see attitude is the best. Some may agree and call this a prudent saving of resource, some may disagree and call it sticking their head in the sand.
Whatever stance anyone decides to adopt, I imagine Vodafone are banking on this vulnerability never appearing in the wild and natural attrition gradually phasing the vulnerability out, while relying on their customers to disable MMS automatic downloads.
Which is why baking a bandaid solution into an MMS app would seem like a good idea...
If it meant you had to switch to "ABC" MMS app to achieve some form of security surely it is the lesser evil than waiting for an update that probably will not happen
