So under apps --> settings you should see a default option.  Otherwise go into the app via the app settings and see if it is there.

If that does not work uninstall - reinstall maps and hope it asks.

I had the same issue between spotify and youtube music however android auto started to remember the one i was using the most once i picked it (open the app) via android auto.
