I use JetVD http://www.jetvd.com/

It lets you download the videos in whatever quality you desire, and you can even just download the audio in mp3 format

Im using Tubemate which seems to work well.

Downloads full HD video seamlessly back to the S3.

Also to note is it functions just like normal youtube whereas JetVD etc you have to intially search specifically for something then they just list the relevant videos

The Lite version is on Google Play / Market.....but only plays content and doesn't download. But the Lite version takes you to the dev's web site where you can download the full version  - for free - that can also download. The full version was kicked off Google Play. 

Most videos can be downloaded in a wide variety of qualities and formats.....including just stripping the audio out as an MP3 for playing as such.....though be warned the quality of the resulting MP3 files can be quite.......variable...as content owners tend to not put great quality soundtracks on videos that can be easily ripped.  But it can be 'good enough' for most people.
