Seems like everyone but me has Lollipop, just wondering if anyone knows when VF NZ customers will get it ?

not just Vodafone. I have a 2 degrees one 6 months old using on Vodafone and no update yet. Not sure when 2 degrees will release an update

Which S5 variant? I don't think there are any official SM-G900I Lollipop ROMs yet, though big chunks of Europe have received it for the SM-G900F.

Flashing to an offical samsung rom via odin won't trip Knox.

THe rom you're after is the Polish rom. It's the only (the last time I checked) SM-G900F 5.0 rom out.

The only downside of doing so is you lose carrier specific features such as HD voice and Fast dormancy if the rom you're flashing doesn't have them enabled

Keep in mind if you do flash a newer rom, if it involves a bootloader update you will not be able to downgrade. So for example you won't be able to flash a european 5.0 rom and then go back to VFNZ 4.4. If you want to go back to NZ firmware you'll need to wait for the NZ release of whatever OS version you flashed.

You can downgrade if the bootloader is compatible, but it's a good idea to assume that it won't be.

I tried Lollipop CM12 for a while but never really liked AOSP so reverted back and happy to wait until the dev's get hold of the Sammie roms.

There is quite a few Lollipop firmwares available for the G900F from sammobile but I'm not a fan of stock Sammie firmware either
